ZIDARICH
Born in Prepotto, Benjamin Zidarich's Zidarich winery fully represents the love for the Carso. The result is his wines, strongly based on the characteristics of the vine and the territory. Zidarich pay the utmost attention to the balance of the development of the vines, with maximum respect for naturalness as well as its natural wines.
His words fully explain the role that the territory has had on his choices.
Carso is a wine-producing region on the Adriatic coast of Friuli Venezia Giuliana, near the border with Slovenia. The place name Carso is also a term for the limestone that is the soil of this land. The soil of Carso is low in soil, and there is bedrock 30 cm below the red soil, which is exactly the vineyard above the bedrock.
Benjamin practices extremely natural viticulture, does not use SO2 at all in the winemaking process, and works according to the lunar calendar, such as bottling on a full moon day. The grapes are grown by the sun and the earth, and the wine is grown by the moon.

"Wine is a gift from nature. Just make the grapes into wine and bottle it. The Carso is my land. It represents who I am, what I do and how I think. The Carso is life and work. I believe in tradition and the calling of the earth. I produce wines naturally, according the concept of "vini veri" or real wines."
In 2009, after eight years of work, the new cellar was inaugurated, which extends for about 1,200 square meters, dug deep into the rock underneath their vineyards and built using local resources. The cellar is 20 meters deep with a total of five floors.
The entire wine production process from vinification to aging to tasting takes place inside different areas the cellar. The aging area where a vaulted stone ceiling was built, the tasting room located on the highest level and terrace on the ground floor boast incredible views of the nearby vineyards, as well as the distant sea.
The earth removed during the excavations was used in the vineyards and the walls themselves were built with the stones deriving from the excavations.
